
Quick Istarski Ombolo with Sauerkraut

A simplified and faster version of the traditional dish, using pre-sliced pork and quicker braising techniques. This version retains the core flavors of pork and sauerkraut but is more suitable for a weeknight meal.

Sastojci
- Pork loin, thinly sliced800g
- Sauerkraut, pre-shredded800g
- Onion, thinly sliced1 medium
- Garlic, minced2 cloves
- Caraway seeds1 tsp
- Vegetable broth or water300 ml
- Oil2 tbsp
- Saltto taste
- Black pepperto taste

Drain the sauerkraut well. If desired, rinse and drain again.

Heat oil in a large skillet or pot over medium-high heat. Sear the thinly sliced pork loin until browned on both sides. Remove pork and set aside.

Add the sliced onion to the skillet and sauté until softened, about 5 minutes.

Add the minced garlic and caraway seeds, cook for 1 minute until fragrant.

Return the pork to the skillet. Add the sauerkraut and vegetable broth (or water).

Bring to a simmer, then reduce heat, cover, and cook for 30-40 minutes, or until pork is tender and flavors have melded.

Season with salt and pepper to taste. Adjust liquid if needed.
