- Pre-cooked beef tripe, cut800 g
- Onions, finely chopped1 large
- Garlic, minced3 cloves
- Smoked bacon or pancetta, diced50 g
- Tomato passata200 ml
- Vegetable broth400 ml
- Paprika1 tsp
- Bay leaf1
- Fresh parsley, choppeda small bunch
- Saltto taste
- Black pepperto taste
- Olive oil1 tbsp

In a pot, heat olive oil over medium heat. Add diced bacon/pancetta and cook until crisp. Remove and set aside.

Add chopped onions to the pot and sauté until softened, about 5 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Stir in the paprika and cook for 30 seconds.

Add the pre-cooked tripe, tomato passata, vegetable broth, and bay leaf. Season with salt and pepper.

Bring to a simmer, then reduce heat, cover, and cook for 30-40 minutes, allowing flavors to meld and the sauce to thicken slightly.

Stir in the cooked bacon/pancetta.

Remove the bay leaf. Adjust seasoning.

Serve hot, garnished with fresh parsley.
