  • Pre-cooked beef tripe, cut800 g
  • Onions, finely chopped1 large
  • Garlic, minced3 cloves
  • Smoked bacon or pancetta, diced50 g
  • Tomato passata200 ml
  • Vegetable broth400 ml
  • Paprika1 tsp
  • Bay leaf1
  • Fresh parsley, choppeda small bunch
  • Saltto taste
  • Black pepperto taste
  • Olive oil1 tbsp

    In a pot, heat olive oil over medium heat. Add diced bacon/pancetta and cook until crisp. Remove and set aside.

    Add chopped onions to the pot and sauté until softened, about 5 minutes.

    Add minced garlic and cook for 1 minute until fragrant.

    Stir in the paprika and cook for 30 seconds.

    Add the pre-cooked tripe, tomato passata, vegetable broth, and bay leaf. Season with salt and pepper.

    Bring to a simmer, then reduce heat, cover, and cook for 30-40 minutes, allowing flavors to meld and the sauce to thicken slightly.
