- Beef shank or chuck roast500g

- Carrots2 medium
- Parsley root1 large
- Celery root1/2 medium
- Onion1 medium
- Bay leaf2
- Whole black peppercorns1 teaspoon
- Saltto taste

- All-purpose flour150g
- Fresh parsley for garnishsmall bunch

Place beef in a large pot, cover with cold water, and bring to a boil. Skim off any foam.

Add bay leaves and peppercorns. Reduce heat, cover, and simmer for at least 2 hours, or until beef is very tender.

While the beef simmers, prepare the noodles: Whisk eggs with a pinch of salt. Gradually add flour, mixing until a stiff dough forms. Knead briefly on a floured surface until smooth. Let rest for 30 minutes.

Roll out the dough very thinly and cut into fine noodles. Let them dry slightly.

Peel and chop the carrots, parsley root, celery root, and onion. Add them to the pot during the last 30-45 minutes of simmering.

Once the beef and vegetables are tender, remove the beef and vegetables from the broth. Strain the broth if desired for a clearer soup.

Shred or dice the cooked beef and slice the vegetables.

Bring the broth back to a gentle boil. Add the homemade noodles and cook for 3-5 minutes, or until they float and are tender.

Return the beef and vegetables to the pot. Season with salt to taste.

Serve hot, garnished with fresh chopped parsley.
