- Dried chickpeas200g
- Italian sausage (mild or hot)250g, casings removed
- Onion1 medium
- Garlic3 cloves
- Carrots1 large
- Kale1 bunch, stems removed and chopped
- Diced tomatoes (canned)400g
- Chicken or vegetable broth1 liter
- Olive oil1 tbsp
- Red pepper flakes (optional)1/4 tsp
- Saltto taste
- Black pepperto taste

Soak dried chickpeas in water overnight. Drain and rinse.

In a large pot, combine soaked chickpeas with broth to cover. Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until tender.

While chickpeas cook, finely chop the onion and garlic. Dice the carrot. Chop the kale.

In a separate large pan, heat olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside, leaving drippings in the pan.

Add the chopped onion and carrot to the pan drippings. Sauté until softened, about 5-7 minutes. Add garlic and red pepper flakes (if using) and cook for 1 minute.

Stir in the chopped kale and cook until wilted, about 3-5 minutes.

Add the diced tomatoes (with their juice) to the pan and bring to a simmer.

Once chickpeas are tender, add the sautéed vegetable and kale mixture, and the cooked sausage to the chickpea pot.

Simmer for another 15-20 minutes to allow flavors to meld.

Season with salt and black pepper to taste.
