- Firm white fish fillets, cut into bite-sized pieces700g
- Small new potatoes, quartered400g
- Yellow onion, finely chopped1
- Garlic, minced2 cloves
- Olive oil75 ml
- Vegetable or fish broth400 ml
- Lemon juice30 ml
- Dried oregano1 tsp
- Fresh dill, chopped (for garnish)a small bunch

Heat olive oil in a pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the quartered new potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until potatoes are almost tender.

Add the bite-sized fish pieces, lemon juice, and dried oregano. Season with salt and pepper.

Simmer gently for another 8-10 minutes, or until the fish is cooked through and flakes easily. Do not overcook.
