- Lemon juice1 tsp

Preheat oven to 220°C (425°F).

Wash and halve the bell peppers, remove seeds and membranes. Place cut-side down on a baking sheet.

Roast for 15-20 minutes, until tender and slightly charred.

While peppers roast, mince the garlic.

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.

Once peppers are roasted, let them cool slightly, then slice into strips.

Toss the pepper strips with the garlic-oil mixture.
