- Salmon fillet400g
- Heavy cream200ml
- Garlic2 cloves
- Olive oil2 tbsp
- Fresh parsley1/4 cup, chopped
- Lemon juice1 tbsp

Cook fettuccine according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.

While pasta cooks, season salmon fillet with salt and pepper. Pan-sear salmon in olive oil over medium-high heat for 3-4 minutes per side, until cooked through. Let it rest, then flake into large pieces.

In the same pan, sauté minced garlic in a little olive oil for about 1 minute until fragrant.

Pour in heavy cream and lemon juice. Bring to a simmer and cook for 2-3 minutes, stirring, until the sauce slightly thickens.

Add the flaked salmon and chopped parsley to the sauce. Stir gently to combine.

Add the drained pasta to the pan with the sauce. Toss to coat evenly. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Season with salt and pepper to taste. Serve immediately, garnished with extra parsley.
