Prepare your grill with a rotisserie attachment. Set up for indirect heat.

Trim excess fat from the lamb chops if desired, but leave some for flavor.

Rub the lamb chops generously with salt, black pepper, and smashed garlic cloves.

Thread the lamb chops onto the rotisserie spit, ensuring they are secure and balanced. Tuck herb sprigs between the chops.

Brush the lamb with olive oil.

Turn on the rotisserie motor and begin cooking over indirect heat. Cook for approximately 60-90 minutes, depending on the size of the chops and desired doneness. Aim for an internal temperature of 60-63°C (140-145°F) for medium-rare.

Remove the spit from the grill. Let the lamb rest on the spit for 10 minutes before carefully removing the chops.
