- Fennel bulb2 medium

- Garlic4 cloves
- Fresh dill1 bunch

Preheat oven to 170°C (340°F).

Cut lamb into large chunks. Peel and cut potatoes into 2-inch pieces. Trim and slice fennel bulbs into wedges. Mince garlic. Zest and juice the lemon. Chop half the dill.

In a large bowl, toss lamb, potatoes, and fennel with olive oil, minced garlic, lemon zest, chopped dill, salt, and pepper.

Arrange the mixture in a roasting pan. Pour white wine and lemon juice over everything.

Roast for 2 to 2.5 hours, or until lamb is very tender and potatoes are cooked through. Stir halfway through.
