Preheat oven to 180°C (350°F).

Score the skin of the pork shoulder. Rub generously with salt and black pepper.

Peel and cut potatoes into large chunks. Toss with olive oil, salt, pepper, chopped garlic, rosemary, and thyme.

Place the pork shoulder in a roasting pan. Arrange the seasoned potatoes around the pork.

Roast for approximately 2.5 to 3 hours, or until the pork is tender and the potatoes are golden and crispy. Baste the pork with its own juices occasionally.
