- Smoked bacon, diced150 g
- Onions, chopped3 large
- Garlic, minced4 cloves
- Mushrooms, sliced200 g
- Sweet paprika3 tbsp
- Tomato paste2 tbsp
- Dry red wine200 ml
- Beef broth500 ml
- Potatoes, peeled and cubed500 g
- Bay leaf1
- Vegetable oil1 tbsp
- Saltto taste
- Black pepperto taste

In a large pot, render the diced bacon over medium heat until crisp. Remove bacon bits and set aside, leaving the rendered fat.

Add beef cubes to the bacon fat and brown on all sides. Remove beef and set aside.

Add chopped onions to the pot and sauté until softened and golden, about 10 minutes.

Add sliced mushrooms and cook until browned, about 5-7 minutes.

Stir in minced garlic and cook for 1 minute.

Remove from heat, stir in paprika and tomato paste. Mix well.

Return beef to the pot. Pour in the red wine and scrape up any browned bits from the bottom. Let it simmer for 2 minutes.

Add beef broth, bay leaf, salt, and pepper. Bring to a simmer.

Cover, reduce heat to low, and simmer for 1.5 to 2 hours, until beef is tender. Add water if needed.

Add cubed potatoes. Cover and simmer for another 30-40 minutes, until potatoes are tender.

Stir in the reserved crispy bacon bits. Adjust seasoning. Remove bay leaf. Serve hot.
