- Spicy smoked sausage (e.g., kulen or chorizo)250g
- Onion1 medium
- Garlic3 cloves
- Red bell pepper1
- Green bell pepper1
- Tomato puree200g
- Smoked paprika1 tsp
- Chili flakes (optional)1/4 tsp
- Vegetable broth300ml
- Saltto taste

Soak the dried white beans overnight. Drain and rinse.

Boil the beans in fresh water for about 45-60 minutes until tender. Drain, reserving some cooking liquid.

Slice the sausage. Dice the onion and bell peppers. Mince the garlic.

In a large oven-safe pot, sauté the sausage slices until browned. Remove sausage and set aside.

In the same pot, sauté the diced onion and bell peppers until softened, about 7-10 minutes.

Add the minced garlic, smoked paprika, and chili flakes (if using). Cook for 1 minute until fragrant.

Stir in the tomato puree and cook for 2 minutes.

Add the cooked beans, reserved sausage, and vegetable broth. Stir well. If the mixture seems too thick, add a little of the reserved bean cooking liquid.

Season with salt and black pepper to taste. Bring to a simmer.

Cover and bake in a preheated oven at 180°C (350°F) for 30-40 minutes, until heated through and flavors have melded.
