Sastojci
- Dried chickpeas300g
- Onion1 large
- Carrots2 medium
- Celery stalks2
- Garlic3 cloves
- Vegetable oil2 tbsp
- Smoked paprika1 tsp
- Bay leaf1
- Saltto taste
- Black pepperto taste

- Fresh parsleyfor garnish

Soak dried chickpeas overnight in plenty of water. Drain and rinse.

Chop onion, carrots, and celery into small dice. Mince garlic.

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery. Sauté until softened, about 8-10 minutes.

Add minced garlic and smoked paprika. Cook for 1 minute until fragrant.

Add the drained chickpeas, bay leaf, and enough water to cover everything by about 2 inches.

Bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours, or until chickpeas are very tender. Add more water if needed to maintain a stew consistency.

Remove the bay leaf. Season generously with salt and black pepper to taste.
