Sastojci
- Dried chickpeas250g
- Smoked sausage (e.g., Kulen or similar)150g
- Pancetta or smoked bacon50g
- Onion1 medium
- Garlic2 cloves
- Vegetable oil1 tbsp
- Tomato paste1 tbsp
- Vegetable broth600ml
- Saltto taste
- Black pepperto taste
- Fresh rosemaryfor garnish

Soak dried chickpeas overnight. Drain and rinse.

Dice the smoked sausage and pancetta. Chop onion and mince garlic.

In a large pot, sauté the diced pancetta over medium heat until crispy. Remove pancetta and set aside, leaving rendered fat in the pot.

Add vegetable oil if needed. Add chopped onion and sauté until softened, about 5 minutes.

Add minced garlic and tomato paste. Cook for 1 minute until fragrant.

Add the drained chickpeas, diced smoked sausage, and vegetable broth. Bring to a boil.

Reduce heat, cover, and simmer for 1 to 1.5 hours, or until chickpeas are tender. Add more broth if needed.

Stir in the reserved crispy pancetta. Season with salt and black pepper to taste.
