- Pork tenderloin500g
- Pre-sliced mushrooms250g
- Shallot1
- Garlic powder1 tsp
- Milk or half-and-half150ml
- Chicken broth100ml
- Olive oil2 tbsp
- Cornstarch1 tbsp
- Fresh chives1 tbsp, chopped
- Saltto taste
- Black pepperto taste

Cut pork tenderloin into thin strips or medallions. Season with salt, pepper, and garlic powder.

Finely chop the shallot.

Heat olive oil in a skillet over medium-high heat. Cook pork strips until browned and cooked through. Remove from skillet.

Add the chopped shallot to the skillet and sauté until softened, about 2 minutes.

Add the pre-sliced mushrooms and cook until tender, about 5 minutes.

In a small bowl, whisk together cornstarch with a little cold water to form a slurry. Add to the skillet.

Pour in the chicken broth and milk/half-and-half. Stir constantly until the sauce thickens.

Season the sauce with salt and pepper to taste.

Return the cooked pork to the skillet and toss to coat in the sauce. Heat through for 1-2 minutes.
