- Kalamata olives1/2 cup, pitted
- Feta cheese100g, cubed
- Olive oil4 tbsp
- Fresh rosemary1 tbsp, chopped
- Fresh thyme1 tbsp, chopped
- Garlic3 cloves, minced
- Salt1/2 tsp
- Black pepper1/4 tsp
- Wooden skewers8-10

Cut chicken thighs into 1.5-inch cubes.

In a bowl, combine olive oil, chopped rosemary, thyme, minced garlic, salt, and pepper.

Add chicken cubes to the marinade, toss to coat. Marinate for at least 30 minutes.

If using wooden skewers, soak them in water for 30 minutes.

Thread marinated chicken, lemon wedges, and Kalamata olives alternately onto skewers. Add cubes of feta cheese towards the end of threading.

Preheat grill to medium heat. Grill skewers for 12-15 minutes, turning occasionally, until chicken is cooked through and slightly charred. The feta will soften and slightly melt.
