Ensure the salt cod is well-rinsed and flaked. If not pre-soaked, boil briefly until tender, then flake.

In a bowl, combine the flaked cod, mashed potatoes, garlic powder, dried parsley, egg, and breadcrumbs. Season with salt and pepper. Mix until just combined.

Form small, compact fritters.
