- Mlinci (dried flatbread)150g
- Garlic powder1 tsp
- Dried thyme1 tsp
- Saltto taste
- Black pepperto taste

- Duck fat or olive oil2 tbsp

Preheat oven to 200°C (400°F).

Score the skin of the duck breasts. Season with salt, pepper, garlic powder, and dried thyme.

Heat duck fat or olive oil in an oven-safe skillet over medium-high heat. Sear duck breasts skin-side down until golden brown and crispy, about 5-7 minutes.

Flip the duck breasts and transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until cooked to desired doneness (internal temperature of 74°C/165°F for medium-well).

While duck is roasting, break mlincima into pieces and place in a baking dish. Pour hot duck drippings from the skillet over the mlincima. Add a little hot water if needed. Mix.

Place the mlincima in the oven for the last 10 minutes of duck roasting time to warm through and absorb juices.

Let the duck breasts rest for 5-10 minutes before slicing.

Serve sliced duck breast with the mlincima, drizzled with pan juices.
