- Vegetable or meat broth750ml

Soak the dried beans overnight. Drain and rinse.

In a large pot, combine the soaked beans with the smoked ham hock/prosciutto bone. Cover with water and bring to a boil. Skim foam, then reduce heat and simmer for about 1.5 hours, or until beans are tender.

Remove the ham hock/bone. Once cool enough to handle, shred any meat and discard the bone. Set meat aside.

While beans cook, finely chop onion, garlic, carrot, and celery. Peel and dice potatoes.

In a separate pan, heat olive oil. Sauté onion until soft. Add garlic, carrot, and celery, and cook for 5 minutes.

Add the sautéed vegetables, diced potatoes, and chopped greens to the pot with the beans. Add the shredded meat.

Pour in the broth. Bring to a simmer and cook for another 30-40 minutes, or until potatoes are tender and greens are wilted. The stew should be thick.

Season with salt and black pepper to taste. Serve hot, optionally with a drizzle of olive oil and fresh parsley.
