- Coconut Milk500ml
- Bird's Eye Chilies (or chili paste)1-2 tbsp
- Ground Turmeric1 tsp
- Ground Galangal1 tsp
- Lemongrass (paste or finely chopped)1 tbsp
- Shallots (sliced)3
- Kaffir Lime Leaves3
- Assam Gelugur (or tamarind paste)1 tsp
- Saltto taste
- Wateras needed
- Vegetable Oil1 tbsp

In a pot, heat vegetable oil over medium heat. Sauté sliced shallots until softened.

Add bird's eye chilies (or chili paste), ground turmeric, ground galangal, and lemongrass paste. Stir-fry for 1-2 minutes until fragrant.

Add the smoked beef and stir-fry for 3-4 minutes.

Pour in the coconut milk, kaffir lime leaves, and assam gelugur (or tamarind paste). Bring to a simmer.

Cook for 15-20 minutes, stirring occasionally, until the beef is tender and the sauce has thickened slightly.

Season with salt to taste. Add a splash of water if the curry is too thick.
