  • Belacan (shrimp paste)1 tsp
  • Kaffir lime leaves4 leaves

  • Cooking oil2 tbsp

    Prepare the chili paste: Soak dried chilies in hot water for 15 minutes. Blend fresh red chilies, soaked dried chilies, shallots, garlic, belacan, galangal, lemongrass (bottom part), and turmeric into a smooth paste. Add a little water if needed.

    Heat cooking oil in a pot or wok over medium heat. Add the chili paste and sauté until fragrant and the oil separates, about 10-15 minutes.

    Add the smoked duck pieces to the pot and stir to coat with the paste. Cook for 5 minutes.

    Pour in the coconut milk and water. Add kaffir lime leaves and turmeric leaves (if using). Bring to a simmer.

    Reduce heat to low and let it simmer gently for at least 30 minutes, allowing the flavors to meld. Stir occasionally to prevent sticking.

    Season with salt and black pepper to taste. Adjust consistency with more water if too thick.
