  • Shallots1 cup, sliced
  • Garlic4 cloves
  • Dried chilies15-20
  • Belacan (shrimp paste)1 tsp
  • Tamarind paste2 tbsp
  • Sugar1 tbsp
  • Cooking oil1/2 cup
  • Hard-boiled eggs4
  • Roasted peanuts1/2 cup
  • Cucumber1, sliced

    Rinse rice and place in a rice cooker. Add coconut milk, pandan leaves, and salt. Cook according to rice cooker instructions.

    For the sambal: Soak dried chilies in hot water until softened, then drain. Blend chilies, shallots, garlic, and belacan into a paste.

    Heat cooking oil in a pan. Fry half of the dried anchovies until crispy. Remove and set aside.

    In the same oil, sauté the chili paste until fragrant and oil separates. Add tamarind paste, sugar, and salt. Cook for 10-15 minutes until thickened.

    Stir in the remaining dried anchovies into the sambal. Cook for another 2 minutes.

    Serve the coconut rice with sambal ikan bilis, hard-boiled egg halves, crispy anchovies, roasted peanuts, and cucumber slices.
