- Turmeric1/2 inch
- Belacan (shrimp paste)1 tsp
- Tamarind paste1 tbsp
- Lime juice2 tbsp

Prepare the sambal paste: Blend or pound red chilies, shallots, garlic, ginger, and turmeric into a coarse paste. Toast belacan briefly and add to the paste.

Marinate the fish: Score the fish on both sides. Rub the sambal paste generously over and inside the fish. Let it marinate for at least 20 minutes.

Prepare the grilling sauce: Mix tamarind paste, lime juice, a little salt, and a tablespoon of cooking oil.

Grill the fish: Grill the marinated fish over medium-hot charcoal or on a grill pan for about 8-12 minutes per side, or until cooked through and slightly charred. Brush with the grilling sauce during the last few minutes of cooking.
