    Clean and descale the whole sea bass. Make a few shallow slits on both sides of the fish.

    Prepare the steaming liquid: In a small bowl, mix soy sauce, sesame oil, sugar, and a pinch of salt.

    Finely chop garlic, ginger, and red chilies. Juice the limes.

    Place the fish on a heatproof plate. Pour half of the soy sauce mixture over the fish. Arrange some ginger slices and chili on top.

    Steam the fish over high heat for 10-15 minutes, or until cooked through. The exact time will depend on the size of the fish.

    While the fish is steaming, prepare the sauce: In a saucepan, heat a little oil. Sauté the chopped garlic, ginger, and chilies until fragrant.

    Add the lime juice and the remaining soy sauce mixture to the saucepan. Simmer for 2-3 minutes. Add water if the sauce is too thick.

    Once the fish is cooked, carefully remove it from the steamer. Discard any excess liquid from the plate.
