- Tamarind Paste40g
- Dried Chilies10-15
- Shallots80g
- Garlic3 cloves
- Galangal1 inch
- Lemongrass1 stalk
- Turmeric Powder1 tsp
- Belacan (shrimp paste)1/2 tsp
- Vegetable Oil2 tbsp
- Water250ml
- Saltto taste
- Sugar1 tsp
- Tomatoes1 medium
- Okra100g
- Thai Basil Leaves (for garnish)a few sprigs

Soak dried chilies in hot water until softened, then drain. Blend dried chilies, shallots, garlic, galangal, lemongrass, and belacan into a paste.

Soak tamarind paste in warm water, then strain to get tamarind juice.

Heat oil in a pot and sauté the ground paste until oil separates and it's fragrant.

Add turmeric powder and stir.

Pour in the tamarind juice and water. Bring to a boil.

Add mackerel pieces, tomatoes, and okra. Season with salt and sugar.
