  • Lemongrass1 stalk
  • Chilies (dried or fresh)5-10
  • Belacan (shrimp paste)1 tsp
  • Tamarind paste1 tbsp
  • Sugar1 tbsp
  • Oil for fryingsufficient
  • Anchovies (ikan bilis)1/2 cup
  • Peanuts (roasted)1/2 cup
  • Hard-boiled eggs4

    Rinse rice thoroughly. In a rice cooker or pot, combine rice, coconut milk, pandan leaves, water, and salt. Cook until done.

    Prepare the chicken marinade: Blend ginger, garlic, shallots, lemongrass, chilies, turmeric powder, coriander powder, cumin powder, and fennel seeds into a paste. Marinate chicken pieces with this paste and salt for at least 30 minutes.

    Prepare the sambal: Sauté blended chilies, belacan, and shallots until fragrant. Add tamarind paste, sugar, and salt. Cook until oil separates.

    Heat oil for deep frying. Fry the marinated chicken until golden brown and cooked through.

    Slice cucumber and prepare hard-boiled eggs.
