- Coconut milk400ml
- Water100ml
- Shallots1 large, blended
- Garlic2 cloves, blended
- Turmeric powder1 tsp
- Chili paste (sambal tumis)1-2 tbsp, to taste
- Tamarind paste1 tsp, diluted in water
- Saltto taste
- Black pepperto taste
- Vegetable oil1 tbsp
- Spring onionsfor garnish

In a pot, combine coconut milk, water, blended shallots, garlic, turmeric powder, and chili paste.

Bring to a simmer over medium heat, stirring constantly to prevent curdling.
