A simplified version of Sambal Tumis Ikan Bilis, using pre-made chili paste for speed. It retains the core flavors of anchovies and chili but is quicker to prepare.

Bahan
- dried anchovies (ikan bilis)75g
- store-bought chili paste (sambal oelek or similar)4 tbsp
- shallots, thinly sliced100g
- garlic, minced2 cloves
- tamarind paste1 tbsp
- sugar1.5 tbsp
- salt0.5 tsp
- cooking oil75ml

Rinse and pat dry the dried anchovies.

Heat cooking oil in a pan over medium-high heat. Fry the anchovies until crispy. Remove and set aside.

In the same pan, sauté sliced shallots and minced garlic until fragrant.

Add the store-bought chili paste and cook for 5 minutes, stirring well.

Stir in tamarind paste, sugar, and salt. Cook for another 5 minutes until the sauce thickens.

Return the fried anchovies to the pan and toss to coat. Serve immediately.
