  • fresh red chilies150g
  • garlic cloves30g
  • shallots30g
  • dark soy sauce100ml
  • sweet soy sauce (kecap manis)50ml
  • sugar1 tbsp
  • saltto taste
  • vegetable oil50ml

    Finely chop or blend fresh chilies, garlic, and shallots. For a smoother texture, use a blender.

    Heat vegetable oil in a pan over medium heat. Sauté the chili mixture until fragrant, about 3-5 minutes.

    Add dark soy sauce, sweet soy sauce, sugar, and salt. Stir well and cook for another 5 minutes until slightly thickened.

    Serve immediately or let cool. This sambal is best consumed fresh.
