- Squid500g
- Coconut milk400ml
- Turmeric powder1 tsp
- Chili paste (sambal tumis)2 tbsp
- Shallots3
- Garlic3 cloves
- Ginger1 inch
- Lemongrass1 stalk
- Curry leaves1 sprig
- Red chilies1-2
- Vegetable oil2 tbsp
- Saltto taste
- Water100ml

Clean and cut the squid into rings.

Pound or blend shallots, garlic, ginger, and turmeric powder into a paste.

Heat oil in a pot or wok. Sauté the paste until fragrant.

Add chili paste, lemongrass (bruised), and curry leaves. Cook for 2-3 minutes.

Add squid and stir-fry until it changes color.

Pour in coconut milk and water. Bring to a simmer.

Add sliced red chilies. Season with salt.

Simmer gently for about 5-7 minutes, or until squid is cooked but not tough. Do not overcook.
