  • Chili paste (sambal tumis)3 tbsp
  • Dark soy sauce100 ml
  • Sweet soy sauce (kecap manis)50 ml
  • Palm sugar, grated2 tbsp
  • Water200 ml
  • Lemongrass, bruised1 stalk
  • Turmeric powder1 tsp
  • Saltto taste
  • Black pepperto taste
  • Cooking oil2 tbsp
  • Fried shallots (for garnish)optional

    Heat cooking oil in a pot over medium heat. Sauté chopped onions, garlic, and ginger until fragrant.

    Add chili paste and turmeric powder, cook for 2 minutes until the oil separates.

    Pour in dark soy sauce, sweet soy sauce, palm sugar, and water. Add the bruised lemongrass stalk.
