- Onions, chopped2 medium
- Garlic, chopped4 cloves
- Ginger, sliced1 inch piece
- Chili paste (sambal tumis)3 tbsp
- Dark soy sauce100 ml
- Sweet soy sauce (kecap manis)50 ml
- Palm sugar, grated2 tbsp
- Water200 ml
- Lemongrass, bruised1 stalk
- Turmeric powder1 tsp
- Saltto taste
- Black pepperto taste
- Cooking oil2 tbsp
- Fried shallots (for garnish)optional

Heat cooking oil in a pot over medium heat. Sauté chopped onions, garlic, and ginger until fragrant.

Add chili paste and turmeric powder, cook for 2 minutes until the oil separates.

Add the cubed beef and stir-fry until it changes color.

Pour in dark soy sauce, sweet soy sauce, palm sugar, and water. Add the bruised lemongrass stalk.

Bring to a boil, then reduce heat to low, cover, and simmer for 2-2.5 hours, or until the beef is tender and the sauce has thickened.

Remove the lemongrass stalk. Season with salt and black pepper to taste.
