- Dark soy sauce3 tbsp
- Light soy sauce2 tbsp
- Chili paste (sambal oelek or similar)1-2 tbsp (adjust to spice preference)
- Dried chilies5-10, soaked and chopped (optional)
- Sugar1 tbsp
- Garlic4 cloves, minced
- Ginger1 inch, grated
- Onion1 medium, sliced
- Vegetable oil2 tbsp
- Water1/2 cup

Cut beef into bite-sized cubes.

In a bowl, mix dark soy sauce, light soy sauce, chili paste, sugar, and water. Set aside.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and grated ginger, stir-fry until fragrant.

Add sliced onion and chopped dried chilies (if using), stir-fry until softened and fragrant.

Add beef cubes and stir-fry until browned on all sides.

Pour in the prepared spicy soy sauce mixture. Bring to a simmer.
