- Beef sirloin, thinly sliced500g
- Onions, sliced1 large
- Garlic, minced3 cloves
- Ginger, grated1/2 inch piece
- Chili paste (sambal oelek or similar)2 tbsp
- Tomato paste3 tbsp
- Ketchup3 tbsp
- Soy sauce1 tbsp
- Sugar1 tbsp
- Saltto taste
- Black pepperto taste
- Vegetable oil2 tbsp
- Water1/4 cup
- Bell pepper, sliced (optional)1/2
- Red chilies, sliced, for garnish1-2
- Cilantro, for garnisha few sprigs

Heat oil in a wok or large skillet over high heat. Add thinly sliced beef and stir-fry until browned. Remove beef and set aside.

Add sliced onions to the wok and stir-fry until slightly softened, about 2 minutes.

Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.

Stir in chili paste and tomato paste. Cook for 1 minute, stirring constantly.

Add ketchup, soy sauce, sugar, salt, and black pepper. Stir well to combine.

Add the water and bring the sauce to a simmer. If using bell peppers, add them now and cook for 1-2 minutes until slightly tender-crisp.

Return the browned beef to the wok. Toss to coat evenly in the sauce and cook for another 1-2 minutes until heated through.
