- Beef sirloin or flank steak500g
- Fresh turmeric root5cm piece
- Shallots3 medium
- Garlic3 cloves
- Galangal2cm piece
- Lemongrass stalk1 stalk
- Kaffir lime leaves3 leaves
- Chili padi (optional)2-3
- Vegetable oil3 tbsp
- Saltto taste
- Black pepperto taste

Thinly slice the beef against the grain.

Peel and finely grate or blend the turmeric, shallots, garlic, galangal, and lemongrass into a paste. If using, finely chop the chili padi.

In a bowl, combine the beef slices with the turmeric paste, chopped chili padi (if using), salt, and black pepper. Marinate for at least 30 minutes.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add the marinated beef in a single layer, working in batches if necessary to avoid overcrowding.

Stir-fry the beef until it is browned and cooked through, about 5-7 minutes per batch. Add the kaffir lime leaves during the last minute of cooking.

Add 2 tbsp of water if the pan becomes too dry, scraping up any browned bits.
