- Beef sirloin or flank steak500g
- Fresh turmeric root3cm piece
- Shallots2 medium
- Garlic2 cloves
- Dried red chilies5-7
- Palm sugar1 tbsp
- Soy sauce1 tbsp
- Tamarind paste1 tsp
- Vegetable oil3 tbsp
- Saltto taste
- Black pepperto taste
- Water2 tbsp

Thinly slice the beef against the grain.

Peel and finely grate or blend the turmeric, shallots, and garlic into a paste. Deseed and roughly chop the dried red chilies.

In a bowl, combine the beef slices with the turmeric paste, chopped chilies, salt, and black pepper. Marinate for at least 20 minutes.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add the marinated beef and stir-fry until browned.

Add palm sugar, soy sauce, and tamarind paste. Stir well to coat the beef and allow the sugar to caramelize slightly.

Add 2 tbsp of water if the mixture becomes too dry.
