- Oyster sauce2 tbsp
- Dark soy sauce1 tbsp
- Sugar1 tsp
- Sesame oil1 tsp
- Freshly cracked black pepper1.5 tbsp
- Garlic4 cloves, minced
- Ginger1 inch piece, minced
- Onion1/2, sliced
- Shiitake mushrooms150g, sliced
- Red capsicum (bell pepper)1/2, sliced
- Green capsicum (bell pepper)1/2, sliced
- Vegetable oil2 tbsp
- Cilantrosmall bunch, for garnish

Slice beef thinly against the grain. Marinate with 1 tbsp cornstarch, 1 tbsp soy sauce, and 1 tsp water for 15 minutes.

Prepare the sauce: combine remaining soy sauce, oyster sauce, dark soy sauce, sugar, sesame oil, and 1/4 cup water.

Heat 1 tbsp oil in a wok over high heat. Stir-fry beef until browned, then remove and set aside.

Add remaining 1 tbsp oil. Sauté garlic and ginger until fragrant. Add sliced onion and cook until softened.

Add sliced mushrooms, red and green capsicum. Stir-fry for 2-3 minutes until vegetables are tender-crisp.

Return beef to the wok. Pour in the sauce and add the freshly cracked black pepper. Stir to combine.
