- Ginger1/2 inch piece
- Belacan (shrimp paste)1/2 tsp
- Lemongrass stalk1/2 stalk
- Star anise1
- Soy sauce2 tbsp
- Honey2 tbsp
- Brown sugar1 tbsp
- Vegetable oil3 tbsp
- Saltto taste
- Water1/4 cup
- Toasted sesame seedsfor garnish
- Lime wedgefor garnish

Soak dried chilies in hot water until softened. Drain and blend with shallots, garlic, ginger, and belacan to form a chili paste.

Cut beef into bite-sized cubes.

Heat vegetable oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Add the chili paste, bruised lemongrass, and star anise. Stir-fry until fragrant and oil separates.

Add the beef cubes and sear on all sides.

Pour in soy sauce, honey, brown sugar, salt, and water. Bring to a simmer.

Cover and cook on low heat for 30-40 minutes, or until beef is tender and the sauce has thickened and caramelized.
