- Beef chuck roast1 kg
- Beef broth2 liters
- Potatoes500 g
- Carrots300 g
- Parsnips200 g
- Onion1 large
- Garlic4 cloves
- Bay leaf2
- Fresh dill1 bunch
- Saltto taste
- Black pepperto taste
- Vegetable oil2 tbsp

Cut beef chuck roast into large cubes. Season generously with salt and pepper.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Sear beef cubes on all sides until browned.

Remove beef from the pot and set aside. Add chopped onion to the pot and sauté until softened, about 5-7 minutes.

Add minced garlic and cook for another minute until fragrant.

Return beef to the pot. Pour in beef broth, ensuring the meat is covered. Add bay leaves.

Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours, or until beef is very tender.

While the beef simmers, peel and dice potatoes, carrots, and parsnips into bite-sized pieces.

Add the diced root vegetables to the pot during the last 30-40 minutes of simmering, or until tender.

Remove bay leaves. Taste and adjust seasoning with salt and pepper if needed.

Ladle the hot soup into bowls. Garnish generously with fresh chopped dill before serving.
