- Cooked chicken, shredded200 g
- Lemongrass, bruised1 stalk
- Bay leaf1
- Vegetable oil1 tbsp
- Shallots, finely chopped50 g
- Garlic, minced3 cloves
- Turmeric powder1 tsp
- Coriander powder1 tsp
- White pepper powder1/2 tsp
- Nutmeg powderpinch
- Evaporated milk50 ml
- Saltto taste

- Rice vermicelli (bihun)100 g
- Fried shallotsfor garnish
- Scallions, choppedfor garnish
- Lime wedgesfor serving

In a pot, heat vegetable oil. Sauté chopped shallots and minced garlic until fragrant. Add turmeric powder, coriander powder, white pepper, and nutmeg powder. Cook for 1 minute until fragrant.

Pour in the chicken broth and add the bruised lemongrass and bay leaf. Bring to a boil, then reduce heat and simmer for 10 minutes.

Remove lemongrass and bay leaf. Stir in the evaporated milk and shredded cooked chicken. Heat through gently. Season with salt to taste.

Prepare rice vermicelli according to package instructions. Drain.

Serve the soup by placing vermicelli and shredded chicken in a bowl, then ladle the hot broth over. Garnish with fried shallots and chopped scallions. Serve with lime wedges.
