  • eggs2
  • bean sprouts1 cup
  • garlic3 cloves, minced
  • shallots2, sliced
  • dried chilies5, soaked and blended
  • chili paste (sambal oelek)2 tbsp
  • tomato sauce3 tbsp
  • soy sauce2 tbsp
  • dark soy sauce1 tbsp
  • sugar1 tsp
  • vegetable oil3 tbsp
  • cilantro2 tbsp, chopped
  • lime1, cut into wedges
  • saltto taste
  • black pepperto taste
  • wateras needed

    Prepare the chili paste by blending soaked dried chilies with garlic and shallots.

    Cube and fry tofu until golden. Set aside.

    Heat vegetable oil in a wok over medium-high heat. Stir-fry the chili paste until fragrant.

    Add prawns and squid rings. Stir-fry until prawns turn pink and squid is cooked. Push seafood to one side.

    Add eggs to the empty side and scramble. Mix everything together.

    Add yellow noodles, chili paste, tomato sauce, soy sauce, dark soy sauce, and sugar. Stir-fry vigorously to coat noodles.

    Add a little water if needed. Stir-fry until noodles are cooked and sauce is slightly thickened.

    Toss in the fried tofu and bean sprouts. Stir-fry for another minute.

    Season with salt and black pepper to taste.
