Bahan
- Rice (Beras Siam or similar)3 cups
- Coconut milk2 cups
- Water1.5 cups
- Fenugreek seeds (Halba)1 tbsp
- Salt1 tsp
- Shallots5-6
- Garlic3 cloves
- Ginger1 inch
- Lemongrass2 stalks
- Galangal1 inch
- Turmeric powder1 tsp
- Chili paste (Cili kering)3 tbsp
- Mackerel tuna (Ikan Tongkol)500g
- Tamarind paste2 tbsp
- Assorted vegetables for acar (cucumber, carrot, pineapple)2 cups
- Vinegar1/4 cup
- Sugar2 tbsp
- Hard-boiled eggs4
- Curry leavesa sprig

Wash rice and drain. In a pot, combine rice, coconut milk, water, fenugreek seeds, and salt. Cook until rice is done and fluffy.

Prepare the fish curry: Blend shallots, garlic, ginger, lemongrass, and galangal into a paste. Sauté the paste until fragrant.

Add turmeric powder and chili paste, cook for a few minutes.

Add fish pieces and tamarind paste. Simmer until fish is cooked and the gravy thickens.

Prepare acar: Dice vegetables. Mix with vinegar, sugar, and salt. Let it pickle for at least 30 minutes.

Serve the cooked rice with fish curry, acar, and a hard-boiled egg on the side. Garnish with curry leaves.
