- Chili bean paste (doubanjiang)2 tbsp
- Soy sauce3 tbsp
- Water6 cups
- Saltto taste
- Black pepperto taste
- Yellow noodles (mee)400g
- Cilantro1/4 cup
- Red chilies1
- Fried garlic2 tbsp

Slice pork belly into thick pieces. In a pot, sauté minced garlic and ginger until fragrant. Add chili bean paste and stir-fry for 1 minute.

Add pork belly to the pot and sear lightly. Pour in soy sauce and water. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, or until pork is very tender.

Remove pork belly from the broth and slice thinly. Strain the broth and season with salt and black pepper to taste.

Blanch the yellow noodles in boiling water until cooked. Drain well.
