- Canned Sardines in Tomato Sauce2 cans (approx. 15 oz each)
- Roti Canai Dough8 pieces
- Large Onion1, finely chopped
- Garlic2 cloves, minced
- Ginger1 inch piece, grated
- Green Chilies2, sliced (optional)
- Curry Leaves1 sprig
- Turmeric Powder1 teaspoon
- Coriander Powder1 teaspoon
- Chili Powder1/2 teaspoon (or to taste)

- Vegetable Oil2 tablespoons

Drain the sardines, reserving some of the tomato sauce. Flake the sardines into a bowl.

Heat vegetable oil in a pan over medium heat. Sauté onions until softened, about 5 minutes.

Add minced garlic, grated ginger, and curry leaves. Cook for 1 minute until fragrant.

Stir in turmeric powder, coriander powder, and chili powder. Cook for another minute.

Add the flaked sardines and a tablespoon or two of the reserved tomato sauce. Mix well. Add sliced green chilies if using. Season with salt and black pepper to taste. Cook for 5-7 minutes until the mixture is well combined and slightly dry.

Prepare the roti canai dough according to package instructions or your preferred method. Flatten each piece of dough into a thin circle.

Spoon a portion of the sardine mixture onto one half of each roti circle. Fold the other half over to create a semi-circle, pressing the edges to seal.

Heat a lightly oiled pan or griddle over medium heat. Cook the filled roti for 3-4 minutes per side, or until golden brown and crispy.
