- Coconut milk (for roti)200ml

Soak dried chilies in hot water. Blend soaked chilies, onions, garlic, ginger, galangal, candlenuts, turmeric powder, coriander powder, and belacan into a smooth paste.

Heat vegetable oil in a pot. Sauté the spice paste until fragrant and oil separates.

Add chicken pieces, bruised lemongrass, and tamarind paste. Stir well.

Pour in coconut milk and water. Add potatoes. Bring to a boil, then reduce heat and simmer until chicken and potatoes are tender.

Season the curry with salt to taste. Simmer for another 5 minutes.

Prepare the Roti Jala batter: Whisk together flour, egg, coconut milk, salt, and oil until smooth. Add water if needed to reach a thin consistency.

Heat a non-stick pan or griddle over medium heat. Lightly grease with oil.

Drizzle the batter onto the hot pan in a lacy pattern using a piping bag or mold.

Cook for about 1-2 minutes until the edges lift. Fold the Roti Jala.
