Bahan
- Beef, lean, finely shredded500g
- Coconut milk200ml
- Shallots, thinly sliced150g
- Garlic, minced3 cloves
- Ginger, grated1 inch piece
- Galangal, grated1 inch piece
- Lemongrass, bruised2 stalks
- Turmeric powder1 tsp
- Chili powder1 tbsp
- Coriander powder1 tsp
- Cumin powder1 tsp
- Saltto taste
- Sugar1 tbsp
- Tamarind paste1 tbsp
- Vegetable oil2 tbsp

In a bowl, mix the shredded beef with turmeric powder, chili powder, coriander powder, cumin powder, salt, and sugar. Set aside.

Heat vegetable oil in a wok or large pan over medium heat. Sauté shallots, garlic, ginger, and galangal until fragrant.

Add the bruised lemongrass stalks and stir-fry for another minute.

Add the marinated beef to the wok and stir-fry until it changes color and is partially cooked.

Pour in the coconut milk and tamarind paste. Bring to a simmer and cook, stirring occasionally, until the liquid has almost completely evaporated.

Reduce heat to low and continue to cook, stirring constantly, until the beef is very dry, fluffy, and golden brown. This process can take up to 1-2 hours.

Remove lemongrass stalks. Taste and adjust seasoning if necessary.
