- Lemongrass stalks3

- Turmeric powder1 tbsp
- Coriander powder1 tbsp
- Cumin powder1 tsp
- Shallots8
- Garlic cloves4
- Chili paste (dried chilies, soaked)2 tbsp
- Sugar (palm sugar preferred)2 tbsp
- Salt1 tsp
- Coconut milk200 ml
- Peanuts, roasted and unsalted250 g
- Tamarind paste1 tbsp
- Water200 ml
- Cucumber1
- Red onion1
- Bamboo skewers20

Prepare the marinade: Pound or blend lemongrass and galangal into a paste. In a large bowl, combine chicken pieces with lemongrass-galangal paste, turmeric powder, coriander powder, cumin powder, chopped shallots, garlic, chili paste, sugar, and salt. Mix well and marinate for at least 2 hours, or preferably overnight in the refrigerator.

Prepare the peanut sauce: Grind roasted peanuts into a fine paste. In a saucepan, combine peanut paste with coconut milk, tamarind paste, sugar, and salt. Add water and simmer over low heat, stirring constantly, until the sauce thickens. Adjust seasoning to taste.

Thread the marinated chicken onto soaked bamboo skewers.

Grill the satay skewers over medium-high heat, turning occasionally, until cooked through and slightly charred. This usually takes about 8-10 minutes.

Prepare accompaniments: Slice cucumber and red onion into wedges.
