- Chicken Thighs600g, boneless, cut into chunks
- Basmati Rice400g, washed
- Vegetable Oil3 tbsp
- Onions2 medium, thinly sliced
- Garlic Paste1 tbsp
- Ginger Paste1 tbsp
- Briyani Spice Mix (pre-made)3 tbsp
- Canned Diced Tomatoes200g
- Chicken Broth500ml
- Saffron Threadsa pinch, soaked in warm milk
- Fresh Cilantro1/4 cup, chopped
- Fried Shallots1/4 cup
- Saltto taste
- Black Pepperto taste

Heat vegetable oil in a pot. Sauté sliced onions until golden. Add garlic and ginger paste, cook for 1 minute.

Add chicken chunks and brown them. Stir in the briyani spice mix and cook for 2 minutes.

Add diced tomatoes and cook until softened. Pour in chicken broth and bring to a simmer.

Add the washed basmati rice to the pot, ensuring it's submerged in the liquid. Add salt and pepper to taste.

Bring to a boil, then reduce heat to low, cover tightly, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.

Stir in saffron milk, chopped cilantro, and fried shallots. Let it rest for 5 minutes before serving.
