- Basmati rice300g
- Boneless lamb leg, cubed500g
- Vegetable oil3 tbsp
- Onions, sliced2 medium
- Garlic, minced3 cloves
- Ginger, minced1 inch piece
- Briyani spice mix (pre-made)3 tbsp
- Tomato paste2 tbsp
- Yogurt, plain100g
- Saffron threads (optional)pinch
- Rose water (optional)1 tbsp
- Saltto taste
- Black pepperto taste
- Wateras needed
- Fresh cilantro, choppedfor garnish

Rinse basmati rice and set aside.

In a pot, heat oil and sauté onions until softened. Add garlic and ginger, cook for 1 minute.

Add cubed lamb and brown on all sides.

Stir in briyani spice mix and tomato paste, cook for 2 minutes.

Add yogurt and cook for another 5 minutes until the lamb is tender.

Add rinsed rice to the pot, gently mix with the lamb and spices.

If using, dissolve saffron in warm water with rose water and add to the pot.

Add enough water to just cover the rice and lamb. Season with salt and pepper.

Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until rice is cooked.

Let rest for 5 minutes. Fluff rice gently and garnish with cilantro.
