    Mash the ripe bananas in a bowl until mostly smooth with a few small lumps remaining.

    In a separate bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.

    Gradually add the dry ingredients to the mashed bananas, mixing until just combined. Add water a little at a time to achieve a thick, drop-able batter consistency.

    Heat vegetable oil in a wok or deep pan over medium-high heat until hot (around 170-180°C or 340-350°F).

    Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.

    Fry for 3-5 minutes, turning occasionally, until golden brown and cooked through.

    Remove the fritters with a slotted spoon and drain on paper towels.
