- Pre-cooked rice or quick-cook rice4 cups
- Chicken breast (cubed)500g
- Canned diced tomatoes1 can (400g)
- Onion (chopped)1 medium
- Garlic (minced)2 cloves
- Store-bought sambal tumis4 tbsp
- Tomato ketchup3 tbsp
- Chicken stock1 cup
- Saltto taste
- Sugar1 tsp
- Vegetable oil2 tbsp
- Fried shallots (for garnish)1 tbsp

Prepare rice according to package directions or use pre-cooked rice. If making tomato rice, cook rice with a little tomato paste, butter, and chicken stock.

Heat vegetable oil in a pan. Sauté chopped onion until softened. Add minced garlic and cook for 1 minute until fragrant.

Add store-bought sambal tumis and tomato ketchup. Cook for 2-3 minutes, stirring constantly.

Add cubed chicken breast and stir-fry until almost cooked through.

Pour in diced tomatoes and chicken stock. Bring to a simmer. Season with salt and sugar.

Cook for 10-15 minutes, stirring occasionally, until the sauce thickens and chicken is fully cooked.
