Bahan

  • Pre-cooked rice or quick-cook rice4 cups
  • Chicken breast (cubed)500g
  • Canned diced tomatoes1 can (400g)
  • Onion (chopped)1 medium
  • Garlic (minced)2 cloves
  • Store-bought sambal tumis4 tbsp
  • Tomato ketchup3 tbsp
  • Chicken stock1 cup
  • Saltto taste
  • Sugar1 tsp
  • Vegetable oil2 tbsp
  • Fried shallots (for garnish)1 tbsp

Langkah

    Prepare rice according to package directions or use pre-cooked rice. If making tomato rice, cook rice with a little tomato paste, butter, and chicken stock.

    Heat vegetable oil in a pan. Sauté chopped onion until softened. Add minced garlic and cook for 1 minute until fragrant.

    Add store-bought sambal tumis and tomato ketchup. Cook for 2-3 minutes, stirring constantly.

    Add cubed chicken breast and stir-fry until almost cooked through.

    Pour in diced tomatoes and chicken stock. Bring to a simmer. Season with salt and sugar.

    Cook for 10-15 minutes, stirring occasionally, until the sauce thickens and chicken is fully cooked.
